Eye of Round Roast is a lean, cylindrical cut from the rear leg (round primal) of the cow. Because our grass-fed, grass-finished beef is naturally leaner than grain-fed beef, low-temperature cooking and slicing against the grain are essential for tenderness.
The Eye Round roast comes from the round primal (rear leg). One of the leanest beef cuts, making it ideal for roasting, slow cooking, or slicing thin. Similar in appearance to tenderloin, but much leaner and tougher, requiring proper cooking.
